This Grilled Ginger-Lime Chicken with Nectarines balances sweet, tangy, and smoky flavors — a perfect dish for warm-weather dinners or outdoor BBQs.
INGREDIENTS
For the Chicken Marinade:
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp fresh ginger, grated
- 2 garlic cloves, minced
- Juice and zest of 1 lime
- Salt and pepper, to taste
For the Nectarines:
- 2–3 ripe nectarines, halved and pitted
- 1 tbsp olive oil
- Pinch of salt
For Serving:
- Fresh cilantro or parsley (optional)
- Extra lime wedges
PREPARATION

Marinate the Chicken:
In a bowl, whisk together soy sauce, olive oil, honey, grated ginger, garlic, lime juice, and zest.
Add the chicken and coat well. Cover and marinate for at least 30 minutes (or up to 4 hours in the fridge). -
Prepare the Grill:
Preheat your grill or grill pan over medium-high heat. Lightly oil the grates. -
Grill the Chicken:
Remove the chicken from the marinade and grill for about 5–6 minutes per side, or until fully cooked and nicely charred. -
Grill the Nectarines:
Brush nectarine halves with olive oil and sprinkle lightly with salt.
Place cut side down on the grill for 2–3 minutes, until caramelized and tender. -
Serve:
Plate the grilled chicken with nectarines on the side. Garnish with fresh cilantro and a squeeze of lime juice before serving.
