Banana Foster is the flamboyant dessert that brings theatre to the table. Caramelised bananas simmered in butter, brown sugar, cinnamon, and dark rum create a rich, sultry sauce that dances with fire before embracing cold vanilla ice cream. The result? A lush contrast of hot and cold, soft and crunchy—finished with toasted almonds for texture. Using just-ripe bananas ensures natural sweetness, while the dramatic flambé delivers depth and complexity that belies its simplicity. Whether for a dinner party finale or a luxurious treat for one, this Banana Foster recipe is a decadent masterpiece you’ll return to time and again. INGREDIENTS

2 bananas
1/4 cup of butter
1/2 cup of organic sugar
2 tbsp cinnamon
1/2 cup of rum
Ice cream to taste

PREPARATION

  1. First, put the pan on the fire with the sugar, butter and cinnamon to get the flavours to know each other.
  2. Then, peel and cut the bananas in half lengthwise; for this recipe, we want almost ripe bananas because those are sweeter, but you can regulate the sweetness of the dish with the sugar if your bananas aren’t ripe enough.
  3. Once the pan is hot and the sugar is completely dissolved, take the pan off the fire, and add the bananas with the flat side down. Then, pour the rum into the pan.
  4. When you put the bananas in the fire again, be careful of the alcohol catching flames. After 1 or 2 minutes, the flames are completely gone, plate them with some ice cream and top with some almonds for texture.
  5. We use vanilla ice cream here, but you can substitute it for your favourite flavour.
