Sweet, smoky, and finger-licking delicious — these Kalbi Ribs with buttery grilled corn will make your backyard feel like a Korean BBQ paradise!

INGREDIENTS

For the Kalbi Ribs:

    • 2 lbs (900 g) flanken-cut beef short ribs (about ¼ inch thick)
    • ½ cup soy sauce
    • ¼ cup brown sugar
    • 2 tbsp honey
    • 3 tbsp rice wine (mirin) or apple juice
    • 2 tbsp sesame oil
    • 4 cloves garlic, minced
    • 1 small onion, grated
    • 1 Asian pear (or ½ Bosc pear), grated
    • 1 tbsp ginger, grated
    • 1 tsp freshly ground black pepper
    • 2 green onions, chopped (for garnish)
    • Toasted sesame seeds (for garnish)

For the Grilled Corn with Kalbi Butter:

    • 4 ears fresh corn, husked
    • 1 tbsp olive oil
    • Salt, to taste

Kalbi Butter:

    • ½ cup (1 stick) unsalted butter, softened
    • 1 tbsp soy sauce
    • 1 tbsp honey
    • ½ tbsp sesame oil
    • 1 clove garlic, finely minced
    • 1 tsp gochujang (Korean chili paste, optional for heat)
    • 1 tsp lime juice

PREPARATION

1. Marinate the Kalbi

  1. In a large bowl, mix together soy sauce, brown sugar, honey, rice wine, sesame oil, garlic, onion, pear, ginger, and pepper until the sugar dissolves.
  2. Add the short ribs, coating each piece evenly.
  3. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

2. Grill the Ribs

  1. Preheat your grill or grill pan over medium-high heat.
  2. Lightly oil the grates to prevent sticking.
  3. Remove ribs from marinade and let excess drip off.
  4. Grill each side for 3–4 minutes, until beautifully caramelized and slightly charred.
  5. Let rest for a few minutes before serving.

3. Grill the Corn

  1. Brush corn with olive oil and season lightly with salt.
  2. Grill for 8–10 minutes, turning occasionally until kernels are slightly charred and tender.
  3. While warm, spread each ear with a generous layer of Kalbi Butter.

4. Make the Kalbi Butter

  1. In a small bowl, combine softened butter, soy sauce, honey, sesame oil, garlic, gochujang, and lime juice.
  2. Mix well and refrigerate until ready to use.

5. Serve

  1. Arrange ribs on a platter, sprinkle with chopped green onions and toasted sesame seeds.
  2. Serve alongside the grilled corn with Kalbi Butter.
